I was really in the mood to bake, which is quite dangerous because well... I am not a great baker. In fact, I fail quite often. But I try, and you have to love a trier, right? I really fancied some cookies so I thought, what can go wrong?
I had a look in my baking book - Step by Step baking by Caroline Bretherton. And the cookies all had nuts in, which is disappointing because I really don't like nuts. So I thought I would adapt the recipe to suit me a little bit better. So obviously it was just super, super chocolatey. I decided to go down the milk and white chocolate route because they are my favourite!
You will need: - 100g of Self-Raising Flour - 25g of Cocoa Powder - 150g of Chocolate to melt - 1 Egg - 1 tsp Vanilla Extract (I used flavouring) - 175g Soft Brown Sugar - 75g Butter - 50g White Chocolate Chunks (I used buttons)
How to make: 1. Melt the chocolate in a bowl over some boiling water, but make sure the bowl doesn't touch the water 2. Sift the flour and cocoa powder into a bowl 3. In a separate bowl, mix together the butter and sugar until light and fluffy 4. Then beat in the egg and the vanilla to the butter and sugar mixture 5. Fold in the flour and cocoa powder 6. Mix in the melted chocolate 7. Add the white chocolate chunks 8. Chill for 30 mins 9. Place small amounts onto a baking tray 5cm apart from one another 10. Bake at 180.c for 10-15 minutes until cooked but soft in the middle 11. Enjoy!
